Toast the bread slices. You want it to be fairly toasty, so it holds up and doesn't get soggy.
Mash the avocado. Slice open the avocado and remove the pit. Scoop the flesh out into a small bowl and mash with a fork until it's as chunky or smooth as you like, then spread onto the toast.
If desired, sprinkle some everything bagel seasoning on the mashed avocado.
Heat the butter in a non-stick skillet over medium-low heat. (You can use olive oil as well, but I prefer butter.)
Once the skillet is good and buttery, crack two eggs into the pan. Try not to break the yolk! Cook for 2-3 minutes.
Carefully flip the eggs, again trying your best not to break the yolk. Tip: tilt the skillet towards you, as it'll help get your spatula under the unbroken yolk. Don't overcook here! They should be done in about 20-30 seconds.
Place eggs on prepared toast, with the yolk on top. Season with salt and freshly cracked black pepper, to taste. Enjoy!
