Avocado toast has taken the breakfast world by storm, and for good reason. It’s simple, delicious, and packed with nutrients. But if you want to elevate this classic dish, adding an over easy egg and a bit of everything bagel seasoning on top is the way to go! The creamy avocado paired with the richness of a perfectly cooked egg creates a flavor combination that’s hard to resist. Here’s how you can make the ultimate avocado toast with an over easy egg at home.

Ingredients you’ll need

Avocado toast with egg is a simple yet rich meal. You can easily make this on a busy weekday before work and school, or on a lazy weekend morning. All you’ll need is:

  • Bread slices
  • Ripe avocado
  • Eggs
  • Butter
  • Everything bagel seasoning
  • Salt & pepper

How to prepare

An over easy egg may seem difficult to prepare, but it can actually be quite simple! Added on top of mashed avocado, toast, and some seasoning, and you’ll be in breakfast heaven. I make this at least once a week for my son before school. I can have it whipped up and on the table in no more than 10 minutes, and it beats those sugary processed breakfast items (but if that’s all you have in the pantry, no one’s judging!).

  1. Toast your bread. You can use any type of bread here, just pick your favorite. I often use regular wheat bread, but if I’m feeling fancy I get sourdough or a thicker bread. Toast those slices pretty well, so when you start compiling everything, your bread doesn’t get soggy too quickly.
  2. Mash your avocado. Start by slicing the avocado around the pit, remove the pit, then use a spoon or fork to scoop the avocado flesh into a bowl. Mash up with a fork until it’s the consistency you prefer. I like mine chunkier, but you can certainly mash until smooth. Also, why mash in a bowl and not just put directly onto the toast? Mainly so you don’t poke holes in your bread, but hey, you do you!
  3. Cook your eggs. Heat butter in a non-stick skillet over medium-low heat. You don’t want the pan too hot, since that could cause your eggs to get quickly overdone. Once the butter is melted and the skillet is well coated, carefully crack your eggs into the skillet. Try your best not to break the yolk! Cook for 2-3 minutes, then carefully flip. My tip is to tilt the skillet towards you, letting the butter coat the edges of the eggs before you flip. Then, take your spatula (skillet still tilted) and nudge the egg on. Flip, and let cook for just another 20-30 seconds. Sometimes I even turn the burner off at this point, since I’m basically just cooking the white tops a bit.
  4. Assemble! Spread the avocado mash onto the toast, sprinkle some everything bagel seasoning, top with the eggs (flipping them back to yolk-side-up), and season with salt and freshly cracked pepper to taste.

Notes

You can use any seasoning you like, or omit altogether. Completely up to you! Want to spice it up? Add red pepper flakes or drizzle with hot sauce. Want to add some freshness? Top with diced tomatoes or microgreens.

Use a ripe avocado. You don’t want it too overly ripe where it’s starting to brown inside, but you also don’t want it too stiff either. I’ve also bought those guacamole cups in the produce section of my grocery store. Those are quick and easy to pop open and spread in place of the avocado.

I absolutely love over easy eggs, but if you aren’t one for a runny yolk, by all means cook longer to get an over-medium or fried egg.

  • 2 slices toast any type of bread will do!
  • 1 ripe avocado
  • 2 large eggs
  • 1 tbsp butter for cooking
  • salt & pepper to taste
  • everything bagel seasoning optional

Instructions
 

  • Toast the bread slices. You want it to be fairly toasty, so it holds up and doesn't get soggy.
  • Mash the avocado. Slice open the avocado and remove the pit. Scoop the flesh out into a small bowl and mash with a fork until it's as chunky or smooth as you like, then spread onto the toast.
  • If desired, sprinkle some everything bagel seasoning on the mashed avocado.
  • Heat the butter in a non-stick skillet over medium-low heat. (You can use olive oil as well, but I prefer butter.)
  • Once the skillet is good and buttery, crack two eggs into the pan. Try not to break the yolk! Cook for 2-3 minutes.
  • Carefully flip the eggs, again trying your best not to break the yolk. Tip: tilt the skillet towards you, as it'll help get your spatula under the unbroken yolk. Don't overcook here! They should be done in about 20-30 seconds.
  • Place eggs on prepared toast, with the yolk on top. Season with salt and freshly cracked black pepper, to taste. Enjoy!
